I’m not big on New Year’s resolutions but I do like making small mental notes on improvements that would make for my life easier, healthier, and/or more fun! This year, I’m going to try + expand my repertoire of healthy + easy breakfasts. Starting with re-vamping my steel cut oats: This recipe is delicious and pretty!
Ingredients:
– 1/4 cup steel cut oats
– 1 cup almond milk
– 2 tbsp. ground flaxseed
– 2 tbsp. honey
– 1/4 cup frozen mixed berries
– dash of cinnamon
Directions:
Combine oats + almond milk + flaxseed, heat on medium high until boiling. Reduce + simmer for 20 minutes. Meanwhile, heat honey + mixed berries + cinnamon to a low boil. Reduce heat + simmer for 5 minutes. Pour berry compote over oats. Enjoy 🙂
