Today’s post is all about one of my favorite go-to quick + easy recipes – Guacamole Grilled Cheese!
I had originally noticed this idea on Pinterest but quickly realized it’s insanely easy to make. I’m already obsessed with avocados (I’m amazed at the number of people that have never tried this majorly nutritious fruit) and make guacamole all the time.
I thought – why not combine my guacamole recipe with something else I really loooove? Cheese! If you already have a guacamole recipe you love to make, just whip that up and add to your grilled cheese before you heat on a skillet. If not, I’ll share my recipe:
Guacamole Grilled Cheese Recipe:
- 2 ripe avocados, pits removed
- 1 roma tomato, finely chopped
- 1 1/2 tbsp. red onion, minced
- 1 1/2 tbsp. cilantro
- 1/2 tbsp. garlic powder
- 1/2 teaspoon salt
- A couple of squeezes of lime juice
- 4 slices wheat bread
- 4 slices cheese (I loooove Colby Jack)
- Butter
1.) For the guacamole, half avocados. Remove pit. Mash avocado. Add in other ingredients. Stir.
2.) Heat a skillet to medium-high heat. Butter one side of each slice of bread. Spread guacamole on both un-buttered sides of slices of bread then top with cheese. Grill on one side for about 2-3 minutes or until golden brown and cheese has melted. Flip the sandwich and grill until golden brown.
This recipe can make 2-4 guacamole grilled cheese sandwiches, depending on how much guac you like! Enjoy 🙂
