I’ve been on a semi-healthy eating kick for a few weeks now, originally in preparation for my Miami trip (which I just got back from yesterday – I have so many photos to share with y’all in the near future) and today I wanted to share one of my go-to healthy snacks… Avocado toast. I realize that Pinterest is flooded with different recipes + images of this toast but nonetheless, here ya go. Here’s another, for a reason: It’s quick, easy, and healthy.
I find it extremely difficult to eat healthy when I get off of work and am ravishingly hungry. Those fast food drive-throughs sure do call my name, and sometimes undoubtedly succeed, on my drive home. I never want fast food, ever. Except for when I’m really, really hungry. When I’m hungry, I can’t think straight.
As long as I can get home sans fast food, I am good. Typically, I quickly make some toast. With avocado, tomatoes, and a sprinkle of pink himalayan sea salt… all on a 100% whole wheat Sandwich Thin. This recipe is so easy and fast. Which is what I need. Plus, anything with an avocado always, always sounds good.
HEALTHY AVOCADO TOAST RECIPE:
1 Avocado (sliced/peeled/pit removed)
1/2 Roma tomato, sliced (my fave, although any other tomato will work)
Sprinkle of Pink Himalayan Sea Salt (I typically buy mine at Whole Foods)
1 100% Whole Wheat Sandwich Thin (any bread will work – I like this kind plus it is low-cal)
Toast bread. Smear on avocado, sliced tomato, and sprinkle of sea salt. Enjoy!
That’s it! Oh and something else I’ve tried when I want even more flavor – I took a nod from Gwenyth Paltrow’s book and sometimes I add her recommended Vegenaise, a vegan mayonnaise (you can also find this at Whole Foods). This added touch really is amazing. Also, red pepper flakes are delicious.

I love avocado toast! I like putting an egg white on top of sesame ezekial bread, and then adding some sriracha on top. So good! I will try it with tomatoes next time!
